A Month of Food

Last week, I briefly discussed how the stars came into focus and Jupiter aligned with Mars and lo and behold I made a menu, a very large menu that involved more than planning food for three meals.
It was probably more a matter of grace and someone (my mother?) praying for me. Whatever it was, I have been amazed at how much peace and joy have come from this simple act of deciding in advance what my family would eat each night for dinner. (This is not entirely novel to me, of course, because growing up my mom made a menu that included everything, even breakfast and snacks! I just haven’t followed suit so well.)
Because a few of you asked, I thought I would give a brief rundown of what I included. This is how it worked out: as I walked through the members-only warehouse, I grabbed the meats and veggies that looked good. I wound up with enough ground beef for three meals (crock-pot meatloaf, burritos, taco salad); a bag of meatballs (two nights of spaghetti and meatballs, meatball sandwiches); pork chops (grilled one night, baked one night); chicken (crock-pot recipe, chicken parmesan); mild Italian sausages (enough for three meals, with different sides, including baked potatoes one night, crock-pot apples another night); a few soups; shrimp quesadillas for a few Fridays; spinach quiche (cooked both today, froze one for later).
I think that covers it. I’m not reinventing the wheel here, but this is pretty good for my first shot out at a monthly menu. As I mentioned earlier, as I was dividing the meats, I cooked what I could according to what I needed (making taco meat, cubing chicken) and now have a freezer full of labeled ziploc bags. Maybe next month, I’ll actually cook it all in advance! I hear tell that there are women who actually do this…
