A Very Berry Pie

For his 14th birthday on Tuesday, Eamon declined a traditional birthday cake and requested “pie with lots of different berries in it.”
The only problem was that I don’t happen to have a recipe for “pie with lots of different berries in it.”
The first place I decided to look was one of my favorite recipe sites: AllRecipes.com. I love how the recipes at this site are all rated by “real cooks” and there are lots of comments on most of the entries where people share their experiences with the recipe.
My past experience with baked berry pies was a watery mess. Recipes I used from even some of my favorite cookbooks never seemed to “gel” properly. Always very disappointing.
So it was with hesitation that I tried out a slightly adapted version of a three berry pie. But I was thrilled when it turned out pretty darn good. Very simple! Very pretty! Very good!
Here’s what I baked two of:
1 cup fresh strawberries, halved
1/2 cup white sugar
3 tablespoons cornstarch
2 cups fresh raspberries
1 1/2 cups fresh blueberries
1 recipe pastry for a 9 inch double crust pie
In a large bowl, stir together sugar and cornstarch. Add strawberries, raspberries, and blueberries; gently toss until berries are coated. Line a 9 inch pie plate with half of the pastry. Stir berry mixture, and transfer to the crust lined pie plate. Top with second crust (do the lattice thing if you are so inspired) and seal and crimp the edge. Bake at 375 degrees for 55 minutes and cool on a wire rack.
