Bake Those Vegetables!

Summer vegetable season. Yum.
The newest issue of Food & Wine arrived here yesterday. One of the recipes caught my sister’s eye, so for dinner today we tried it.
It’s a keeper. Simple but delicious, and uses vegetables (okay, technically squash and fruit) that are abundant and cheap during the summer months. We tweaked the recipe a little and enjoyed it greatly.
Here it is:
Summer Vegetable Casserole
adapted from Food & Wine
1 medium onion
1 large clove garlic
2 medium zucchini
2 medium yellow squash
4 plum tomatoes
olive oil
½ teaspoon dried thyme
salt and pepper
¼ cup freshly grated Parmesan cheese
1. Preheat oven to 350°. Oil the inside of a 9x13-inch (or similar size) baking dish.
2. Thinly slice the onion. Mince the garlic. Slice zucchini, squash, and tomatoes to desired thickness. (Recommended is ¼-inch thick.)
3. In a skillet, heat a small amount of oil over medium-high heat. Add onion and saute until just beginning to brown, 3-5 minutes. Add garlic and thyme and saute until fragrant, about 30 seconds. Remove from heat.*
4. In the prepared dish, layer half of the squash and half of the zucchini. Drizzle lightly with olive oil, then sprinkle with salt and pepper. Spread the onion-garlic mixture, then sprinkle with more salt and pepper. Layer the tomatoes; drizzle with oil and sprinkle with salt and pepper. Layer the rest of the squash and zucchini, then drizzle and sprinkle one last time. Finally, sprinkle the Parmesan cheese over the top.**
5. Cover the dish tightly with foil and bake for 40 minutes. Increase oven temperature to 425°. Remove foil and bake for 20 minutes longer, until the vegetables are tender.
6. Serve warm and enjoy the taste of summer!
*If you are short on time, you can skip step 3 and just mix the onions, garlic, and thyme in a small bowl. Sauteing them will add flavor, though.
**The recipe suggests this layering order, but it seems to me any order would be fine as long as the cheese was on top. Get creative if you want to!
