Buffalo Wing… Soup!

A kitchen experiment pays off

I love buffalo chicken wings.  When I’m in the mood for them, just the thought of that spicy orange sauce can make my mouth water.

But while I’ve read that buffalo wings can be easy to make at home, I’ve never had a moment when I was unable to get them at a restaurant and was really craving them so much that it seemed worth it to buy chicken wings and go to the trouble of frying them myself.

However, I am always open to easier ways to bring more buffalo wing flavor into my life.  So I was excited to see a recipe for buffalo wing soup recommended on a cooking blog called “A Year of Crockpotting.”  It looked good, but I preferred not to make it in my slow cooker so I followed the author’s link to the original recipe and tried that instead.

I had high hopes, because the recipe had gotten lots of rave reviews.  Unfortunately, I didn’t like the soup.

It was one of those cases where you can tell that a recipe is a decent recipe, but you know you’re never going to like it, because it’s not to your personal taste.  I’d been hoping that the buffalo wing soup would have a strong buffalo-chicken flavor, but instead it had a strong cheese flavor with buffalo-wing hints.  I don’t like cheese soup, so I was never going enjoy this recipe.

A couple years ago, if I’d had this experience, that would have been it.  I would have given up on the buffalo-wing-soup idea entirely.  But in the past couple of years I’ve been stretching my wings in the kitchen and I feel comfortable experimenting with recipes, so I decided to try to adjust the recipe to make a soup that would have the buffalo-chicken flavor I was seeking.

Often, kitchen experiments fail.  This time, I was lucky.  My changes to the recipe worked just right to create a soup that tasted how I’d hoped the original soup would taste: like chicken and like buffalo sauce.  I was so excited to finally have the soup my taste buds had been seeking!

If you like cheesy soups and want one that tastes like buffalo wings, I’d recommend clicking on one the recipes I linked to above.  If your tastes are more like mine and you’d like to try my version of the recipe, here it is!

I really enjoyed this soup with homemade whole wheat biscuits.  The flavor is so strong that I think it goes well with a plain-ish tasting bread accompaniment.

Buffalo Wing Soup (Arwen’s version)
makes four small servings

6 cups low-sodium chicken broth
1/4 cup butter
1 medium onion, finely chopped
1/2 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon celery salt
1/4 teaspoon garlic powder
1/3 cup flour
3/4 cup milk
2 cups diced cooked chicken
1/4-1/2 cup chicken wing sauce (adjust to taste)

1. In a medium-sized heavy saucepan, bring chicken broth to a strong simmer and reduce by half, to about 3 cups.  Remove from pan and set aside.

2. Melt butter in pan and saute onion until soft.  Add spices and cook about 30 seconds, until fragrant.

3. Stir in flour until smooth.

4. Gradually stir in broth and milk, then add chicken and wing sauce and simmer, stirring frequently, until soup reaches desired consistency.

5. Serve hot and enjoy!
