Croutons and Beyond

A combination of Lenten resolutions and a goal of healthier eating has me turning to salad for at least one meal a day lately.
The trouble with salad, especially daily salad, is that it gets awfully dull after a while. I can start out with the best of intentions,but before I know it, I hear a small voice inside my head when I open the fridge and reach for the greens.
The small voice says something like this: “Noooo-oooooo! Not that salad stuff again!”
The key to sticking with salad, I have found is variety. And thankfully, salad naturally lends itself to variety.
You can switch your greens—spinach, romaine, and mixed spring greens are my favorites.
You can switch your dressing. My current fave is red wine vinaigrette.
You can switch your toppings too. Salted Tortilla Strips add a yummy crunch to any green salad, without a lot of fat.
I also like to experiment with other add-ins as well. Mushrooms and olives are some of my preferred ingredients that no one else in my family will eat. Adding them to my lunchtime salad instead of putting them in a dinnertime recipe allows me to enjoy them without grossing out my loved ones.
I have been happy with my salads lately, but experience tells me that the little voice inside my head will get whiny soon enough. I need to be prepared.
