Say What: this happens a lot. Recently, I heard a young man say that the Church has recinded it’s teaching on Purgatory. I said “Wow! I didn’t hear that! Where did you hear that?” I think he said he heard it from his grandmother. I said, “I think I need big news like that in writing--I look it up in the Catechism!”
Do What: Pancakes.

Say What -
I usually say “that’s a new one on me” and clarify if able to do so briefly if it’s not a direct attack and just a misstatement.
If it’s a direct attack I usually say “I’m sorry you feel that way but that’s not my understanding of what the Church teaches” and wait to see if their reply invites discussion.

Do what:
Brown some loose sausage in a pan with olive oil, garlic and black pepper. Boil ziti or other pasta as directed. When the pasta is done pour the sausage and olive oil over it. Serve with bread and done!
Another pasta dish
Boil pasta (ziti or penne). In the last 3-4 minutes throw in asparagus (chopped into 1 inch pcs). In a separate pan heat up garlic, olive oil, and black pepper. When pasta is done, drain it and then pour garlic and olive oil over it. Toss with smoked mozzarella cheese cut into bite sized pieces.
Both take only 10-15 minutes to put on the table but I’ve even served them at dinner parties because they taste so good…

do what: i freeze my spaghetti sauce so an easy meal is pulling the sauce from the freezer and boiling noodles, make a salad and some bread and dinner is done

Say what: I love Regina’s response - I’m stealing it!
Do What: I always, always, always, keep a bag of Ling Ling Chicken/Veggie potstickers (from Costco) in my freezer. On those nights where it’s looking like drive-thru for dinner, I throw those in to boil, toss a salad and crack open a few cans of mandarin oranges. Very fast and very yummy.

Say What: I’m a to-the-point kinda of girl, so I respond right away and right to the point, in front of anyone else who heard the misunderstanding. It is an act of mercy to correct those who have been lead astray, and as a confirmed Catholic, it is my duty to defend Holy Mother Church.
Do What: Homemade Mac and Cheese and a side of veggies. None of the ingredients need defrosting. If we have thawed meat available, we grill. (This also means my husbands ends up cooking dinner - bonus!)

Say what: I might say, “You know, I think you might be mistaken about that ... I’d love to talk about this more.” And then make sure I had good Scripture and catechism references when the talk happened.
As for meals, canned refried beans on tortillas, sprinkled with cheese, rolled up and heated until melty. Dipped in salsa.

For quick easy dinner I do vegetarian chilli. A can of black beans, a can of kidney beans, a can of tomato sauce, and a can of “zesty” diced tomatoes, plus some frozen corn. Heated up for a few minutes on the stove.

Do what-
For a quick dinner I like to make BLT’s -brown some bacon, slice a tomato, and add a few lettuce leaves. It’s easy to accommodate picky eaters (leave off the tomato), or hardy eaters (add extra bacon, and tomatoes). With a side of sliced fruit and milk, it makes a nutritious meal.
