Favorite Family Meals

It is Saturday again when I call out to readers for ideas for Sunday dinner.
Last week I was traveling, so my cousin Colleen offered to make Sunday dinner. It was so wonderful to walk in the door after a long car ride and sit down to an already made meal!
Colleen made this delicious Stuffed Pepper Soup. So good, that my nephew Joe had thirds and asked for a thermos to take to school the next day.
I asked Colleen to share her recipe with us. Here are her notes and directions:
Stuffed Green Pepper Soup

Ingredients:
2 lbs. ground beef
6 cups water
1 can (28 oz) of diced tomatoes
1 can (28 oz) of tomato sauce
2 or 3 large green peppers
2 cups cooked rice (1/2 cup uncooked)
Shredded Cheddar Jack Cheese
You can also add:
1 medium onion
1/4 cup brown sugar
“I use the same ingredients when I cook this in the crock pot. Brown the meat (with the onion if you are adding onion) and cook the rice following box directions. Put everything into the pot and bring to a boil. Once the soup has reached a boil simmer for 30 to 40 minutes. It will be smoking hot … literally. I burned my throat very badly when I tasted it.
If you want to do it in the crock pot you just throw everything in the crock pot and cook it on low for 6 hours.
Sprinkle liberally with cheese and serve. It says it serves 16, but we served six adults, one teen (which counts as two adults), five kids and we had a bunch of leftovers.”
This is my favorite meal to cook for my big family because it is yummy and very easy to cook. Of course, I can’t take credit for this, my sister-in-law, Sue Kelly, made it for me once and I loved it.
