Good Morning Noontime

There’s a reason that many restaurants serve breakfast around the clock, and it isn’t only that burly all-night truckers like French toast, too.
It’s that breakfast often contains both sweet and savory elements, making for an appealing meal that wakens all of the taste buds. Good Morning, Noontime sandwiches introduce a bit of breakfast sweetness to the noonday meal, while keeping it well-balanced. Lunchtime has never been so sunny.
Good Morning, Noontime
Ingredients:
One loaf raisin bread, sliced
8 oz. cream cheese, cut into cubes
2 cups fresh strawberries, hulled and thinly sliced
Two whole strawberries
1 cup granola
1 to 2 teaspoons honey
Sugar (optional)
Hull and quarter the two whole strawberries, and place in food processor bowl fitted with chopping blade. Add cubed cream cheese, and process strawberries and cream cheese until smooth and creamy. Add honey to taste and process a few seconds longer.
Transfer mixture to small bowl, and stir in 1/2 cup granola. Spread a spoonful of the cream cheese mixture on each of two slices of raisin bread. Take one of the slices and top the cream cheese mixture with a layer of sliced strawberries. (If strawberries are too tart, sprinkle them with a little sugar.) Scatter a tablespoonful of granola atop the strawberries, and top with the second slice of bread. Repeat with remaining ingredients.
Serve with a side of bite-size pretzels. Makes 6 to 8 sandwiches.
