Hamburgers, Dressed Up

Grilling is an easy way to get dinner on the table in the summer, and hamburgers are cheap and good. I really like mine with lettuce, tomato, pickles, and mustard. But eventually that gets old, so this summer I’ve been experimenting with different ways to dress up a burger. This variation was a particular success at our house.
If you have any ideas to make hamburgers more interesting, please share!
Pesto-Cheese-Tomato Burgers
serves 4
1lb ground beef
2 cloves garlic, minced
3/4 cup Parmesan, grated and divided
1/3 cup prepared pesto (I used pesto I had left over from a batch I’d made, but I think jarred pesto would taste just fine)
4 oz mozzarella cheese, thinly sliced
2-3 small tomatoes, seeded and diced
2 Tbsp chopped fresh basil
salt and pepper
Mix ground beef with 1 clove minced garlic and 1/4 cup of the Parmesan, plus salt and pepper. Form into four patties.
While burgers are grilling, mix chopped tomatoes with 1 clove minced garlic and the basil. Salt and pepper to taste.
When burgers are near desired doneness, spread the pesto evenly between the patties, then top with sliced mozzarella cheese. Cover grill and cook until cheese is melted, three to five minutes.
Top each burger with tomato mixture and remaining Parmesan cheese. Enjoy!
(I served these on regular hamburger buns, but I think they’d be even better on grilled slices of Italian bread.)
