In Search of Baked Greatness

When I was first married I made plenty of casseroles because I couldn’t cook very well yet. I generally called my mother at least once during the process even when I was trying to make something as simple as biscuits! Mixing some ingredients in a dish and baking it was fool-proof and therefore perfect for my kitchen-inept self.
In seven years I’ve gained a lot of skill in the kitchen. I have also gained two children. Now my favorite thing about casseroles isn’t their simplicity; I’m confident in my ability to tackle a complex recipe. Instead, I love the fact that they can be made at my convenience and popped in the oven in the evening, so I can serve a hot dinner on time even if some sort of catastrophe occurs fifteen minutes before we’re supposed to eat.
Sadly, I still only have a few recipes for baked dishes. Sadder still, they’re mostly basic. While that is sometimes a convenient feature, there are often days when I have a bunch of free time in the afternoon but know the evening will be crazy, and don’t want to be standing over the stove when my husband walks in at 6:30. On these days, I wish for casserole recipes that are fancier than the average, dishes with the flavors of some of my more complex recipes - but bakeable!
I do have one recipe like this, for King Ranch Casserole. It’s time-consuming to make, but a family favorite. Even my ultra-picky sixteen-year-old brother likes it!
But it would be great to have more than one really nice baked-dish recipe. I know we have plenty of domestic divas among our readers. Can any of you help me out? Full recipes or links or even just ideas in the comments section would be wonderful! I know my whole family will thank you when we’re biting into a brand-new dish of baked deliciousness.
