Lemon Chicken Pasta Tastes Like Spring

So I follow the rockin’ Joia Farmer on Twitter.

A couple of days ago she shared a tweet about celebrating springtime with lemon chicken pasta for dinner and I asked her for the recipe. When she shared the link where she found it, it looked so simple and good I was inspired to try it.

It was simple! It was good! About 3/4 of the family gave it rave reviews while the other 1/4 pronounced it acceptable. Trust me, this is a very good showing in my picky household. Here’s the simple recipe (which I doubled to serve 10 with leftovers):

Cook 1 lb spaghetti (I used Barilla Plus)
Shred 1 roasted chicken (from deli) or a couple of roasted chicken breasts

In a large bowl, whisk:
1/2 cup lemon juice
2/3 cup olive oil
2/3 cup grated parmesan

Drain pasta (save 1 cup of the cooking liquid)
Add pasta and chicken to lemon sauce, mix and add reserved cooking liquid as needed

Garnish with 1 tablespoon lemon zest and some chopped parsley. Serve with extra parmesan at the table.

You could skip the chicken and make this a meatless meal. Or use shrimp or scallops instead. Served with crusty rolls and a fresh green salad, I think this recipe definitely is “spring-worthy.” Enjoy!
