On Top of Spaghetti

Last week I shared my weekly tradition of hosting Sunday dinner for the family. My hope is to share my Sunday dinner plans and gain some encouragement and ideas from the pros (you).
Most of the recipes that I make are the meals that I grew up eating. Every summer our Aunt Jane would invite our family down to the shore for an afternoon swim and then dinner. After our fun in the sun our entire family would stuff into that small cottage for spaghetti and meatballs.
Jane’s meatballs will always stick out in my memory because they were huge. They were about triple the size of any meatball I had ever eaten. We would all sit crowded at the table, and she would serve the plain spaghetti, top it with meatballs, and then have a gravy boat full of sauce (just in case you wanted extra). Spaghetti and meatballs are such a special treat because of my Aunt Jane’s memory.
When I decided to try and honor Jane by making my own sauce and meatballs, I had no idea where to begin. Luckily my good friend Desiree shared her family reicpe with me: breadcrumbs, chopped onion, chopped green pepper, milk, a little sauce, Parmesan cheese combined with the hamburger, shaped into balls, and cooked slowly in the spaghetti sauce. Simple, but so good.
I shared on facebook that I was making meatballs and I learned that there isn’t just one way to make a meatball. One friend soaks stale bread in water, breaks it up and then puts that into the mix, some use eggs, some use more garlic and more seasonings.
Who knew there was such an art and method for making meatballs?
How about you? What are your secrets to making the finest meatball?
