Potato Pancakes

My husband is out of town, and the kids and I are staying with my parents through Tuesday. My sister is home from Colorado for Thanksgiving break. It’s Miriel’s first time home in three months, so it was a given that she would request Dad’s specialty for Sunday breakfast.
These potato pancakes are a family favorite. My dad has been making them for decades, and my brother has been known to eat more than a dozen in one sitting. I hope you enjoy them as much as we do!
Luchow’s Potato Pancakes
(slightly adapted from a recipe in a book my dad says is called Pan and Griddle Cakes, but it’s so old he’s lost the cover)
2 lbs (6 medium) potatoes, peeled
1 small onion
2 Tbsp flour
2 eggs
1½ tsp salt
¼ tsp ground black pepper
¼ tsp nutmeg
2 Tbsp minced parsley
1. Coarsely grate the potatoes or grind them in an old-fashioned meat grinder (this is the way my dad does it and we all love the texture of them this way). Grate or grind the onion as well.
2. In large bowl, stir together potatoes, onions, and remaining ingredients.
3. Heat several tablespoons butter or bacon fat in a skillet over medium-low heat. Ladle large spoonfuls of batter onto hot skillet. Cook until potatoes are soft and edges are golden brown and crispy.
4. Serve hot with applesauce and/or sour cream.
(These freeze well. Reheat in lightly-greased skillet.)
