Does anyone have a good diabetic dessert recipe? My Dad is fairly recently diagnosed as a diabetic and we are just learning. I’m doing Christmas dinner and I’d love to have a dessert available for him that he could eat guilt free. It breaks my heart to see him if we’ve got a table full of sugar-filled desserts and he has to abstain or pick which might upset his sugar levels the least…that said, also looking for a fairly easy recipe so I can swing it with all the other goings on. Does he have a favorite? Some desserts are more easily adjustable, but if he has a favorite, it might be worth it to see how well it can be adapted. Just remember that diabetics have to watch all carbs, not just sugar. So even some sugar free things can be carb-heavy.
My dad (also diabetic) definitely prefers no sugar ice cream, as long as it’s not also low or no fat. With no sugar AND no fat, it’s just not a treat and he says the flavor is off. Many major brands do have a sugar-free version of several varieties.
If he like cheesecake, there are some versions that could be made with Splenda.
We have done sugar-free apple pie, without even adding Splenda. Just use a couple varieties of sweet apple and some extra cinnamon.
If he likes pudding or Jello, they make sugar-free mixes that are pretty good.
Many bakeries or supermarkets also carry sugar-free baked goods, but these can vary in quality.
I hope this helps. If you are looking for something specific, I’m sure you can find a recipe online. The low and no-carb diet popularity has made it easier to find some good recipes.

We have many diabetics in our family. There are often the same desserts available for them, but using Splenda instead of sugar: pies, cheesecake, squares, etc. or desserts that don’t require extra sweeteners like fruit salad or sugar-free jello with fruit (or without) and whipped cream (with Splenda or just plain). Anything with crusts, graham wafers, flour, etc. tends to raise the blood sugar level. However, moderation is always the key.
My grandmother made a lemon-filled angel food cake that was diabetic friendly. It was ‘the’ birthday/holiday cake for many many years. I don’t have the recipe (as I got quite sick of it although it was very good).

I’m not sure what your dad likes, but I just made this carrot cake and brought it into work the other day, and my coworkers said it was the best carrot cake they’d ever had.

(and I didn’t tell them it was made with splenda instead of sugar). It still has flour, so it’s not necessarily low carb, but I used whole wheat flour instead of white flour to decrease the blood sugar spike afterwards.
Dlife also has some good recipes that you can search for by category, so you can look specifically for dessert recipes. And it has the carbs listed, which makes it easier to look for lower carb recipes.
