Sunshine in a Cake

more fun with frosting

Over the weekend, we had a very special young lady in the house turn 15, and this happy-looking cake was part of the celebration.

Yes, those are Twinkies.

No, I don’t usually “bake” with Twinkies.

But Kateri has had her eye on this cake ever since she spotted the recipe in one of my Taste of Home cookbooks a while back.

It really was easy and fun to put together. I made this one on a bit of a smaller scale than the “potluck” version in the link. For starters, I used a boxed mix. And I cut a single chocolate cake layer into a 6-inch circle and then frosted it as they recommend. That way, the whole cake fit on a smaller plate and required fewer Twinkies to complete.

But still we didn’t eat all the Twinkies yesterday and today is Lent again. Does anyone know if Twinkies freeze well? I wrapped up the leftovers and put them in the freezer, so I can let you know ... next Sunday.

Twinkies freeze VERY well!  Some people I know (hehe) sometimes (esp. when pregnant) have been known to eat them frozen.  Very good.

 

This cake is SO cute!!  It just makes you want to smile!!  Thanks and Happy Birthday to your daughter!!!

 

Ahem…do twinkies *ever* go bad?  I mean, isn’t their shelf life like 10 years??

Kidding!

 

Seriously—I’ve always had the impression that if you eat enough Twinkies in your lifetime, you won’t need to be embalmed…

 

Oooh, so cute.  I"m not much of a cake person, but I might substitute the chocolate cake in the middle with a brownie.  Yum!

 

I just printed off your picture of the cake, which looks scrumptious…and your comments on how you made it, and the original recipe to give to my 7-year-old-granddaughter.  She loves to bake, and this is something she would love to make for one of our church’s gatherings.  I remember my children growing up on Twinkies…hmm…Happy Birthday, Kateri…God Bless You…...

 

This would be a fun cake to have next Sunday to celebrate the first day of spring!  Thanks for sharing!
