I am going to try mashed white beans/cauiliflower instead of mashed potatoes from Biggest Loser episode.

 

i just made peppermint bark fudge and will prolly make more over the weekend. Starting to get all the candy made and hopefully can relax on Christmas Eve (that’s the goal I’ve never achieved!!!).

 

I’ve already made and frozen my chocolate truffles.  My mother is babysitting them at her house so I won’t eat them all before Christmas!

 

We made mini-zucchini bread loaves and cornflake wreaths today. I’m doing most of my baking next week. So far the list includes peanut butter balls, shortbread cookies, and sweet & savory spiced pecans.

 

I’ll be making chocolate chip cookies and Christmas sugar cookies this weekend…Yum!

 

Well today is my daughter’s 7th birthday and we are having pizza because that is her favorite. Over the weekend we are going to go cookie crazy and make tons…sugar cookies, Gingerbread, peanutbutter, and Amish puff cookies.

 

I shopped for baking supplies yesterday. I had originally planned on trying some new recipes this year but I’m overwhelmed as it is so I’m falling back on old stand-bys and not doing all that much:
spritz
peanut butter blossoms
choc chip
oatmeal raisin and oatmeal cranberry
meringue kisses
poormans cake
toffee
peppermint bark

 

On Day 16 of my “25 Days of Christmas Treats” on my blog…I am having so much fun!! My son is in hog heaven!!

 

I needed a soft gingerbread recipe. thanks.  My teen just made Lemon Thyme mini breads for her friends. Recipe at Taste of Home.  I made oreo truffles for a cookie exchange.

 

Just made a blackberry/black cherry crisp (adapted from the Apple Crisp recipe from Danielle Bean’s website) for a party tonight.

I think I might try something different for Christmas dinner this year since as of right now we’re not going to be spending it with anyone…I’m thinking lasagna. The kids will eat it and I can make it ahead…perfect.

 

We did lasagna for Christmas for years, until my husband became lactose-intolerant. It was great! Many Italians eat Italian sausage on New Year’s, so we’d make a vegetarian lasagna for New Year’s and have a pile of sausage on the side. Ravioli or tortelini is also good with sausage on the side—sometimes you can get it green, red, and white, which the kids love for Christmas.

 

Gwen: gingerbread cutouts or the cake-style with lemon sauce?  For gingerbread men, we use the recipe from Joy of Cooking; if you don’t make them way thin, they stay nice and soft.  For the cake-style, I use the recipe in Better Homes and Gardens cookbook.  I can post either if you need it.

My favorite for this year (I’ve made them a couple times, but not as Christmas cookies) are baci di dama.  I think the recipe is called “chocolate hazelnut sandwich cookies” on Pioneer Woman’s Tasty Kitchen.  I just dip them in chocolate instead of sandwiching them, but they are So Good!

 

My family’s Über-easy chocolate drop cookies, and lemon sugar cookies.  Yum!!
