Wild for Waffles

So I got a brand new super awesome waffle maker for Mother’s Day.
It’s the third one I’ve owned, but I am thrilled to have it. Pancakes and french toast are nice, but I find myself wanting to make waffles again and again. Since my last waffle maker broke over a year ago, I am little out of practice with my creative waffle baking. Thus far, I have been happy to use the very basic, easy recipe that was printed in the owner’s manual:
2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons white sugar
1 teaspoon salt
2 cups milk
2 eggs
2 tablespoons vegetable oil
In a large bowl, stir together flour, baking powder, sugar and salt. Add milk, eggs and oil; mix well. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.
But I do remember using recipes that called for separating the eggs (and folding in egg whites) that produced very light and fluffy waffles. Like this one, for example.
