When local corn is in season, I’m always looking for ways to use it. I love corn on the cob, but you can only eat so much of that, you know?
So when I saw that The Pioneer Woman had posted a recipe for grilled corn guacamole, I knew I had to try it.

As corny as ... Kansas in August? How about as Pennsylvania in July?
Year ago, when I was a child, we had to wait until August for decent corn on the cob, since that was when local corn came ripe in my home state.

Last week I raved about how much I love corn.
This week I’m going to share a recipe that uses it!
I love soup. It can make such a nice, simple meal. And soup made with corn is the great in the summer because corn is in season. It’s like the taste of summer in a bowl!
This corn chowder is light and has a wonderful concentrated corn flavor. I think it’s great paired with a fruit salad.
