Bean Me Up!

Simple, cheap black bean soup - delicious

Lisa’s request for fish-free meatless meal ideas reminded me that I’ve been meaning to share a recipe for black bean soup.

I love beans, or the idea of them anyway - so nutritious! so cheap! - but I’m kinda spacey about remembering to soak them the night before. I’m embarrassed to admit how many bags of dried beans have spent years languishing in my cupboards.

Enter the slow cooker, and this recipe,... READ MORE

Crunchy at Home

Make your own potato chips!

This is an indulgence, and therefore not particularly Lenten, but I did it last week and I just can’t wait until Easter to share.

Have you ever made homemade potato chips?

My goodness. If you are at all a fan of potatoes and/or fried things, you must try this.

These are not your grocery store’s potato chips. They’re a different breed entirely: with strong potato flavor and exactly as salty and crisp... READ MORE

Deviled Eggs Dressed Up

Try this easy Caesar twist

Smitten Kitchen is my favorite food blog, and last month she had recipe for Caesar salad deviled eggs that I bookmarked immediately. Then I got busy with cooking for Christmas and forgot all about it.

Fast forward to January when - having resolved to add protein to my diet - I pulled the recipe up again, only to discover upon careful reading that it’s fairly fussy. It involves two pans and a mixing... READ MORE

A Summer Treat When Summer's Over

Indoor s'mores are delicious

We’re enjoying a short flashback here (high of 78 today!) but by the calendar, summer is over.

Every year I’m saddened to realize that, yet again, I didn’t get a chance to make s’mores. (We have a gas grill, so it’s harder than when I was a kid and the embers in our charcoal grill pretty much commanded us to roast marshmallows over them.)

S’mores are delicious. Their season is short. I should take... READ MORE

What to Eat When Mom's Away

Culinary Wednesday!

I’m actually away from home as I write this, sharing a quick overnight visit with a friend. A rare treat for me, and probably a different sort of adventure for my family at home.

This time I did not have the foresight or organization to prepare a dinner for them ahead of time. No meatloaf or casserole was sitting in the fridge for them to warm up. Defrosting a package of hamburger was the extent... READ MORE

It's a Muffin Kind of Morning

Homemade Made Easy

I love muffins! So easy! So homemade! So flexible! So very yummy!

Here’s what I’m hoping to convince a kid or two to help me bake up this morning:

Oatmeal Muffins

1 cup milk
1 cup quick cooking oats
1 egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
(We might even put some blueberries in there)

Preheat oven to 425 degrees. Grease muffin... READ MORE

Tabletop Turkeys

Feathered friends for crafty kids

Looking for a way to keep little hands busy while the big turkey cooks?

We made these pictured turkey companions at a recent birthday party. They were not too demanding, but still complicated enough to be interesting for the early elementary crowd. We cut the colored parts from craft foam, but construction paper would work fine, as well.

Of course we filled ours with sweet treats (what’s a birthday... READ MORE

Quicker than Quick Cooking

I need your help!

I posted on Friday evening that we probably didn’t have the flu. By 5:30am on Saturday the baby had a 102° fever.

It’s a good thing I’m not superstitious, huh?

Over the weekend my sister also came down with the flu. My husband hasn’t gotten sick so he went to work today, but the rest of us are still quarantined and in sickie mode.

I’ve given myself a pass on most of my chores for the time being, but... READ MORE
