Homemade Made Easy

I love muffins! So easy! So homemade! So flexible! So very yummy!

Here’s what I’m hoping to convince a kid or two to help me bake up this morning:

Oatmeal Muffins

1 cup milk
1 cup quick cooking oats
1 egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
(We might even put some blueberries in there)

A couple of days ago, Juliette made a batch of banana bread.

As often happens with fresh baked goods aound here, the bread disappeared. Quickly. So quickly, in fact, that 7-year-old Stephen didn’t have any.

Pumpkin Muffins

A fall recipe that works

My sister and I like to cook together, and for a couple years now we’ve been looking every autumn for a good recipe for pumpkin muffins.  We hadn’t had any luck.  Recipes would look promising but the muffins would turn out dense or dry or both.

Sweet Success!

We did get around to baking this afternoon, as I had planned. Though I still have wet bed linens sitting in the washer and only a vague plan for dinner, Juliette’s smile tells me it was time well spent.

Pictured here are these muffins, but we used blackberries instead of blue. And we doubled the recipe, of course.

Blueberry Bounty

It's a delicious time of year!

Do you have blueberries? Do you have LOTS of blueberries? I haven’t yet brought my gang to pick them, but we are planning a trip next week. It usually takes us only a few minutes to pick enough to fill the freezer for many months.
