What to Cook When You're Pressed for Time

After a week of roast chicken, barbecue chicken sandwiches, garlic chicken and pasta, chicken soup and chicken enchiladas — with more of your recipes in the freezer waiting for another time — the kids were looking forward to a promised meatloaf.
After a late appointment with one child’s speech therapist, I was contemplating a very late dinner, when I remembered an old shortcut: plopping the mixture... READ MORE

New Ways With Chicken

Yesterday I ran into the supermarket for Just two items. So I didn’t bother grabbing a cart.
I never learn. As usual, I was staggering up to the checkout line with my arms full. This time, along with the tortillas and teriyaki sauce I’d come for, two boxes of Little Debbies were tucked under my arm, and my poor little fingers were twisted into the ends of plastic bags containing three large roasting... What's In Your Freezer?

I’ve had emails from some of you reminding me that Culinary Wednesday didn’t appear last week, and in a nice way adding, get with it, lady.
Sorry about that, friends.
I was out of town and my optimistic plan of posting from the road didn’t happen. Then when I thought I’d sent the following post to Danielle, I’d mistakenly sent an older one. So, here is what should have appeared on Wednesday, and... READ MORE

As Corny As ...

As corny as ... Kansas in August? How about as Pennsylvania in July?
Year ago, when I was a child, we had to wait until August for decent corn on the cob, since that was when local corn came ripe in my home state.
But over the years, earlier ripening varieties have been developed. In addition, newer types of corn holds their sugar content longer than formerly, so even the out of state stuff we’ve... READ MORE

Berry Good

I went with my youngest son for a walk last evening, bringing my camera along. We took a favorite path between a cornfield and a meadow, and discovered that the juicy jewels of summer — wild black raspberries — are ready for picking.
We’ll be back to this patch tomorrow, and several days thereafter, with pails in hand. These have ripened about a week earlier than usual, so I will be scrambling for... READ MORE
How Do You Build a Better Burger?
Posted by DariaSockey in Food on Wednesday, June 22, 2011
I buy my beef by the half or quarter cow at a time. There’s lots of small farms around here, and I can see just by driving around that this is grass-fed, not corn fed beef. Practically organic, too: the scent of the fertilizer put on the hayfields around here is decidedly natural.
Anyway, my new order just came in, and the freezer is stuffed with hamburger and steak just waiting to sizzle on the... READ MORE
