3 Ways to Eat More Veggies

Got Vegetables? Many Americans Don't

Being mom (and wife!) to a number of somewhat less than enthusiastic vegetable-eaters, this recent article in the New York Times caught my eye:

Told to Eat Its Vegetables, America Orders Fries

Despite health warnings, endorsements from the First Lady, and multi-million dollar ad campaigns, vegetables have yet to win favored food status in the hearts of most Americans.

“It is disappointing,” said Dr.... READ MORE

Chocolatey Goodness

this deserves its own post

In Robyn’s post last week, she talked about the joy and blessings of being part of the Faith and Family team and the hard work of getting the next edition of the magazine ready to hit stands. She also mentioned the newfound treat (pictured there with the ladies) that she was enjoying of late.

Now, if you didn’t click on the “read more” button, you totally missed Robyn’s shoutout to this deliciousness. I almost did. Yesterday, however, by sheer dumb luck (or perhaps divine providence) I spotted these beauties at the grocery store and remembered what Robyn had said. I bought them, brought them home and oh-my-gosh you have got to get some for yourself.

That’s all I want to say—I just really think these deserve their own little blog post. Thank you Robyn, for bringing such joy into my life!

So Sick of Ice Cream

What do you feed a sore mouth?

As I mentioned in today’s podcast, my oldest daughter Kateri had some teeth pulled this week.

Five of them, in fact. One of which was impacted. The poor thing.

The first day was pretty rough and she didn’t want much more than a few popsicles and something to drink.

The next day she was happy to try some ice cream shakes and pudding. I added some Carnation Instant Breakfast to the ice cream shakes... READ MORE

Adorable Produce Adds Fun to Snacktime

I'm sold on baby bananas

Are these “baby bananas” not the cutest snack you’ve ever seen?

I know from the comments on Arwen’s recent apple post that many of you are passionate about produce.

But have you tried these?

When I saw a small package of these baby bananas for sale at the supermarket the other day, I could not resist. I bought them and handed them out for snacks that very evening.

They were an instant hit. Just the... READ MORE

Quick and Easy Corn Bread

one of my family's favorites

When I shared my family’s favorite recipe for corn bread on my blog a few years ago, I immediately drew criticism from some Southerners who told me no “real” recipe for corn bread calls for flour. Or sugar according to some.

I tried their recipes using only corn meal and now I can confirm: I am no Southerner. Blech.

I’ve also tried recipes using corn kernels, buttermilk, and chopped green chiles ...... READ MORE

Have Food, Will Travel

What's in your picnic basket?

Whether you do it at the beach, at the park, at the zoo, or in your own backyard, summertime is a great time for eating outdoors.

I have such fond memories of the giant cooler my mom would fill with egg salad sandwiches and other treats (like Doritos!) for our family’s trips to the beach years ago.

Now that I’m a family picnic-packer myself, I am even more grateful to my mom because know the work... READ MORE

Super Easy Super Yummy Fruit Dip

Great for summertime snacking

When the weather warms up, we all crave snacks that are lighter, fresher, and cooler. And that’s when I turn to this awesomely easy fruit dip.

Though my kids are usually happy to eat plain old fruit anytime, this dip turns any fruit snack into a special treat.

The perfect addition to any lunchtime or get-together, this simple recipe mixes up in minutes. Just add cut fruit and you’ve got a feast for... READ MORE

Super Bowl Snacks

What are you serving?

The big game is coming up! Will you be watching?

And, more importantly, what foods will you be serving?

I am a big fan of traditional hot wings, but the deep frying and high butter content is not exactly health food.

Here’s a spicy alternative I definitely think is worth trying:

Spicy Citrus Wings

1/2 cup honey
1/4 cup orange juice
1 envelope Italian salad dressing mix
1 tablespoon hot pepper sauce... READ MORE

Roasted Red Pepper Dip

or how to get your kids to eat white navy beans

Funny that Arwen should ask about toddler snacking just as I was looking for a good excuse to share my favorite recipe for red pepper dip. Daniel had this dip with wheat crackers for lunch and I am sure Camilla would be a fan as well.

Kids love to dip. Their chicken nuggets, their french fries, their vegetables, their crackers, their bread sticks, their ... fingers. They just love to dip.

I have recently... READ MORE
